Pork and Potatoes Recipe

I am all about cooking for my family, but I do not like complicated recipes.  I try to keep it as simple as possible. Cooking with fresh veggies and herbs is a secure way to pack a punch of flavor into a dish.  Last night I made my husband’s favorite fried potatoes. So, here is the recipe, note that I pair up my potatoes with a small boneless pork chop.

  • 4-5 Medium Size Potatoes
  • 1 Cubanelle Pepper (or any green pepper)
  • 1/4 Cup Red Onion, Chopped
  • 2 Tbsp Olive Oil
  • 2 Tbsp butter
  • Salt
  • Pepper
  • Sour Cream
  • 4 Slices of Bacon
  • 4 Small Pork Chops
  • Salt and Pepper
  • 1/4 Cup Worcestershire Sauce
  • 2 Tbsp Paprika
  • 1 Tbsp Garlic Powder (or one clove of fresh garlic, minced)


  • Peeled and cut the potatoes in small cubes.
  • Add the oil and the butter to the pan until butter melts. Set the temperature to medium-high.
  • Add the potatoes, season with the salt and pepper.
  • Stir constantly.
  • In the meantime, cook the bacon until crispy, then drained all the extra fat, chopped into small pieces.
  • Once the potatoes are crispy all around, removed from the pan, drain the extra oil.
  • Place the potatoes into a deep bowl, season with more salt and pepper.
  • In the pan where you cook the potatoes, cook the pepper and the onion for 2-3 minutes.
  • Add the onions and peppers mixture to the potatoes, toss.
  • Add the bacon, toss.
  • Marinate the pork chops for at least 10 minutes in Worcestershire Sauce, Salt and Pepper, Paprika and Garlic.
  • Cook the pork chops in the bacon fat, medium-high, stir constantly.
  • Remove pork chops and drain extra fat.
  • Serve with the potatoes and add a dollop of sour cream.
