Simple and delicious Sunday Dinner-Bacon wrapped chicken, rice with seafood, fried plantains and stir-fry Bok Choy. Yum!

Bacon-wrapped chicken:  Chicken breast cut in half, bacon cut the strips in half, mediterranean seasoning, salt, pepper.  Sprinkle mediterranean seasoning, salt and pepper on the chicken.  Then wrap each piece in bacon. Place in a baking sheet covered with tin foil.  Bake at 350 for 35 minutes, then sprinkle some olive oil and cook an additional 5 minutes.

Rice with seafood-White rice, a small can of seafood in oil, add 1.5 cup liquid per 1 cup of rice. Bring liquid to a boil, add the rice and the seafood and cook on medium, covered for 20 minutes or until rice is tender.

Bok Choy- Simple rinse very well, add a clove of diced garlic to a deep pan, add olive oil, salt and pepper.  Once the garlic is cooked, then add the Bok Choy and let it cook until tender.

Fried plantains- Grab some green plantains at the store. Peel them and cut them in 1-inch cubes, add oil to the fry daddy and add the plantains. Once the plantains are soft, smashed them, then cook them again until they are crispy. I like to season them with adobo GOYA…you can find the adobo Goya in the Latin isle at your favorite grocery store.
